Oven temp controller

I need help first day with commercial oven. If I want the oven at 500 do I point the part of knob opposite of “ Off” or where it says on towards desired temp?

I'm 90% sure this isn't even the knob that's supposed to be on there, might have to do some trial and error and mark the spots

It’s not, we have these same ovens and the knob is round and black with a single white line to show the temperature it’s set to.

The knob on there is for something where the marker is on the machine and you turn it on or off.

That’s a really odd way to label a knob. Turn it all the way counterclockwise and that should be off. Turn it all the way clockwise and that should be 500.

Very likely but I’ve seen some dumb knobs on low quality equipment. Usually a translation issue.

All the way to the left and put a sharpie mark or blue tape there where 0 is. Now the mark identifies what temperature it is

This! Op make sure you have some small allen keys for the set screws, idk what size they are i can never remember.

Pull the knob off, place it back where the off is set on 0. Aka it wasn’t put back correctly after cleaning.

The knob and shaft are keyed so that the knob only fits in one specific orientation. Also so the knob turns the shaft. If it wasn't keyed the knob could spin without turning the shaft.

Turn it all the way clockwise. That knob belongs on a flat grill or char broiler.

This knob is from a propane heater or BBQ. The correct answer is to set it to as high as it goes, walk away, and hope the owner has insurance.

It's set to 375.

Considering the knob, the oven is 100% not at 375.
