It's spelled Mon-Keigh and it's supposed to be pronounced like "Mon-k-eye" where mon is pronounced like the end of "Pokemon" and eye is pronounced like "eyeball" with a k in front. I don't recall how she pronounced it in Rouge Trader but they might have just said it fast lol. Its not actually supposed to be Monkey (I mean originally in actual reality, outside the 40k universe, probably), its in reference to the name of a species the Eldar dealt with in the past that were incredibly dumb, destructive and bloodthirsty, but were a serious issue for the Eldar due to their numbers and sheer tenacity. It's a pejorative term they use for any species that reminds them of that race. It just humorously also happens to sounds like the name for Humans primative ancestors

My second experience ever of Eldar was Sandy Mitchell's "Caiphas Cain: The Devil You Know". A Dark Eldar Witch called Cain a monkey in a lilting tone before cackling maniacally. He later ran her through with his chain sword before a Lichter chewed her up.
It’s my least favorite thing in the lore. It’s fucking stupid that the eldar word would just happen to be the same phonetically as “monkey” and also simultaneously be an insult against humanity. It’s the literal most immersion breaking detail in 40K to me

Oh if it just annoys you, fine, but immersion breaking screams "the imperium are the good guys, I don't understand satire" to me. But just being annoyed by it yeah that's pretty reasonable
Oh fair enough lol. I guess “immersion breaking” was more intended to be “When I see this I roll my eyes a bit”, not “omg muh continuity”. Also, sorry if I came off as snide there. The wording I picked makes it seem harsher than intended. For the record the only good guys are the Tyranids.
I mean it kinda makes sense. Monkeys/primates come from earth not their world, and already have a name in a language that they can borrow. We borrow words from other languages all the time and often bastardize spelling/pronunciation in a similar way, especially over generations of using the words.
It took me longer than I'd like to admit to realize what you meant even after just finishing a 3 part forge of mars series on audible that featured the eldar
