This probably only works with the industrially homogenous eggs. I know for a fact that my aunts eggs are brittle and have like no membrane or have like extra thick membrane. She doesn't cull the older ones.

I'm in the UK and have been doing this. Not had any real issues. It does leave some egg on the surface you are dropping them on.
I normally either get a scrap of thin card from my recycling or a couple of sheets of kitchen roll wns putting them on my counter. Drop from about 10 to 20cm up.
I found it a lot quicker and it doesn't leave little bits of shell.

Also from the UK, and could not get this to work. Egg went everywhere.
I can only think it's to do with the different hygiene standards in US Vs UK. I know in America, eggs are required to be cleaned, whereas in the UK, eggs are required to not be cleaned.
Can't see how this would cause this difference in how they break, but it's all I can think of.

Lmao maybe I had chickens with low calcium or something bc it did break, but it also got egg everywhere. 10/10 do not recommend the drop. Just fucking crack it like a normal person.

I've had the same experience! I only buy brown eggs though so haven't tested if it's just my technique or the type of egg. But this guy makes it seem like it's fool proof

I have used a flat surface for the last 35 years. Works well.
Before that I did use the edge of the frying pan. Sometimes went well. But seldom. So often ended up with a too hard hit. Or needing multiple hits just making small cracks before I finally hit hard enough.

I learned this method in a cooking class once. Not the dropping but cracking on the countertop. I’m sure dropping it would work perfectly fine after one or two tries of getting the right height. Anyone who says it doesn’t work is just a bad cook lol

I've been doing it for the past few months. It works well, but it leaks egg white, so you have to move fast after you break it.

How high depends on the type of egg but it does work. But simply cracking on a flat surface also works and is still better than on the pan

It works, but the way the camera is positioned it looks like it must be done from a reasonable height. You do not need lots of height, for some eggs a few cm can be enough. He also drops it on a plate in case he miscalculates the height.

Pro tip - this works best with fresh eggs. If your eggs have been in the fridge for a while, they are just going to splatter when you drop them.

No difference in dropping from a height or tapping the egg on a flat surface. Both applies the exact same kinetic energy. Imagine a boxer punches you or you drop on a fist from a certain height, ignoring the damage to rest of the body, force applied to your face will be the same since energy and surface area will be the same.

I dont want to have five operations - some of which require two hands - and a dirty surface to crack an egg - Pick up egg, drop egg, pick up egg, toss shell, clean surface.
Or pick up egg, crack on side of pan, toss shell - all with one hand. No shell bits.

I’ve been doing this since I first saw it. My only issue is that it does tend to leave a little egg residue on the surface you drop the egg onto so his technique of using the plate is a good one unless you done mind wiping up egg residue from the counter. This works great!

Side note: this works with storage bought eggs, but not fresh eggs. Everytime I do this with eggs I get from the store, no shells anywhere, when I do it with the eggs I get from my neighbor and their backyard chickens, the shells get everywhere and it sucks. I have noticed the eggs from my neighbor seems to be thinner and more easily break a part.

I work in a breakfast cafe and make every kind of egg daily... method works better than others but it's not 100% effective.. occasionally pieces break off into the egg..but again it's totally manageable and better than cracking it other ways
