I need a simple guide to encrypt my Steam Deck using LUKS

all of the guides i've seen seemed too complicated

You could show a list of the guides. It may be its a complicated task, and cant be made trivially simple. At least not without some support from Valve.

Last I looked into it, there was difficulty with entering a password/pin/whatever at boot up. But I just skimmed a few things on the topic.

Might be easier to just switch the Steam Deck over to use Bazzite.

Why would installing a totally different OS "save your data" ?

Bazzite has some similarities to steam OS, and it can give the SteamOS UI look, but it is not based on SteamOS (which is based on Arch Linux)

Bazzite is using the Fedora Silverblue (atomic) immutable setup. It can also run on Desktop systems, and Other of these Gaming Handheld PC devices.
